Make a Traditional East Timorese meal
TAU KOI RANA
Ingredients:
Ř 1 pumpkin
Ř coconut milk (Note: In Australia it
may be bought in a tin (N.B.: make sure
it is “lite”/light coconut milk)
Ř Ground corn (i.e., polenta)
Method:
Peel and cube pumpkin. In saucepan cover
with coconut milk. Put lid on and cook
gently until very soft. Mash with potato
masher. Add enough ground corn to thicken
the mixture to approximately the texture
of mashed potato. Cook slightly, stirring
so it does not stick. Add salt to taste.
Though the people of Com, near Los Palos,
may eat this on its own as a staple food,
it makes a good accompaniment to fish
or meat with rice, vegetables or salad.
